Pork chops are a cut of meat from the upper portion of a pig's body, coming from the portion that runs from the pig's hip to its shoulder. They are considered one of the most popular cuts of meat from a pig and come in a variety of shapes and sizes. Chops can be prepared a number of different ways and can be sliced thin or cooked thick.


The most popular of pork chops are probably the center loin chops that have the bone left in. These are very similar in type of to the T-bone steak in beef, and they come from the same portion of the pig that T-bones come from in cattle. In the Midwestern United States, a thicker cut may be referred to as an Iowa chop, a reference to the country's number one pork producing state.

Safflower Petal Chicken


2 lb (1kg) chicken parts. (drumsticks, thighs, breasts etc)
2T (30ml) olive oil
1T (15ml) safflower petals
1T (15ml) paprika
1/2t (2.5ml) dried dill
1/2t (2.5ml) sea salt
1t (5ml) lemon juice
1t (5ml) honey
1 small onion, minced
1 toe garlic, minced

In a skillet place oil, onion, garlic and chicken.
Brown chicken on medium high heat for about 5 min per side keeping onion & garlic stirred.
Reduce heat to low.
Combine all other ingredients in a bowl then use it to coat chicken.
Finish cooking on low until chicken is done (45 - 60 min)



Spicy Chicken & Chorizo pasta


Ingredients:
1x large chicken breast, cut into 1/2" cubes
1x med onion, finely chopped
3x cloves garlic, crushed
2x red chillis, finely chopped
2x chorizo sausages, cut into 1/2" slices
1x can chopped tomatoes
1x tsp italian seasoning
dash Worcestershire sauce
Olive oil

Directions:
Heat olive oil in a large pan and fry the onion and chicken until it starts to brown; add garlic, Worcestershire sauce and chillis and continue frying for a couple more minutes
Add the rest of ingredients; stir well and reduce heat
Simmer for about 30 mins; serve with your favourite pasta



Buffalo Chicken and Potato Casserole


Ingredients

o 2 lbs boneless skinless chicken breasts, cut into 1/2-inch cubes
o 8 medium potatoes, cut into 1/2-inch cubes (you can leave the skin on or peel it off)
o 1/3 cup olive oil
o 1 1/2 teaspoons salt
o 1 tablespoon fresh ground pepper
o 1 tablespoon paprika
o 2 tablespoons garlic powder
o 6 tablespoons hot sauce**

Topping:
o 2 cups shredded cheddar cheese
o 1 cup cooked and crumbled bacon
o 1 cup sliced green onions
Sauce:
o Blue cheese/ranch dressing

Instructions

1. Preheat oven to 500F (Not a typo!)
2. In a large bowl, mix together the olive oil, hot sauce, salt, pepper, garlic powder and paprika.
3. Add the potatoes and toss to coat.
4. Place the potatoes in a greased baking dish.
5. When scooping the potatoes into the baking dish, leave behind any extra olive oil/hot sauce mix for your chicken.
6. Add the diced chicken to the leftover olive oil/hot sauce mix and stir to coat all the chicken. Allow the chicken to marinate as the potatoes bake.
7. Roast the potatoes for 20-25 minutes, stirring halfway, until cooked through and nice and crispy on the outside.
8. Remove potatoes from the oven and lower the oven temperature to 400°F.
9. Place the raw chicken (yes, raw) on top of the potatoes and cook for 20 minutes or until the chicken is done.
10. In a large bowl, mix all the topping ingredients together.
11. Top the chicken with the topping and bake for 5-10 minutes or until topping is melted and bubbly.
12. Serve with extra hot sauce and blue cheese/ranch dressing.

This is pretty spicy, if you want it milder, use less hot sauce.
