Day is slowing down and its time to think about Dinner. What you going to cook. Been hit with that scenario many times. Do you run to the store to get ingredients or do you have them already. What are you going to fix??? Lets see some awesome recipes. I can be several food items or one crock pot, just something good to enjoy after a long day.

4 Cups of peeled and cubed squash or zucchini
1 Medium onion, chopped
½ - 1 cup butter
1 tsp. oregano
1 tsp. basil
Salt and pepper
2 beaten eggs
2 Cups of mozzarella cheese
1 T. Dijon mustard
1 pie crust
Sauté squash, onion, butter, oregano, basil, salt and pepper for a while until tender. Cool slightly and mix in eggs and cheese. Spread the Dijon mustard in the bottom of the pie crust. Pour in squash mixture and bake at 350° for about 30 minutes.
