Beer Can Chicken

This is a recipe that you will really fall in love with.

Items required:

1 - Can of beer
1 - 4-6lb Chicken
1 - Spice Rub ( see recipe below)

Spice Rub

1/4 cup Sea Salt
1/4 cup Hot Paprika
1/4 cup Fresh Ground Pepper
1/4 cup Brown Sugar
combine well..keep in airtight container or jar for future use

Remove bag from inside your chicken, and rinse and blot dry with paper towels inside and out. Rub the chicken with the spice mix, inside and out, until fully coated. You cant have too much spice on the bird.

Open the can of beer, drink half, and punch a couple extra holes in the top of the can.
Place about a tablespoon of the spice run into the beer can....and shake to mix.

Place the bird over the beercan, and set on the bbq. Use the legs of the chicken to steady the bird on the can. Set heat to medium, and cook undisturbed for 1 hour and 15 minutes or until the temp of the bird reaches 180 degrees. If you want a crispier skin, put foil over the bird the last 15 minutes.

Be very careful in removing the beer can from the bird when done, as its VERY HOT!!!

Let bird cool for 5-10 minutes before cutting up the chicken.

This will be the most tender, juiciest bird you have EVER eaten....

Enjoy...

PS...some have asked ..so here is an explaination...

The purpose of the beer it to keep the inside of the bird basted. It stops the bird from drying out. If you dont like beer, you can substitute the beer for another liquid...but I have tried a few, and beer works the best.

Trust me, this will be the juiciest chicken you have ever tasted. Just put the open can inside the chicken, and use it as a base to hold the bird up...and just use the legs to balance it on the can. You can use short twigs to stabilize the bird too if you want.

If your using a gas barbeque, only put the heat on one side..and place the bird on the unheated side...this is called indirect cooking..and make a world of difference in the juiciness of the chicken...

Try it..you will like it..trust me Smiling

This is a family favourite..hope you enjoy it.... <CountryWines>
